Hi Matt, thanks for sharing your awesome recipe. Initially this dish was for my husband as he is on keto diet at the moment. However this cauliflower baked is able to hook my son as well whose doesn’t like cauliflower at all. My son loves it now. He has been asking me to bake again! I made it again and absolutely delicious.

We used smoked bacon so it is “cooked” when we buy it.

I found this recipe today and whipped it up and cannot day enough good things about it!! It’s just like eating a loaded baked potato without the starch and carbs. I made this and it was really delicious…guests loved it and asked for second helpings. I blended the seasonings in with the cauliflower, cheese and sour cream instead of layering as the recipe called for. I also precooked the bacon and crumbled it into the cauliflower mixture before baking, and blended the last mozzarella and cheddar cheese and spread it on top.
I will be making this dish again.
